Recipe(s) of the Month

For the last of the winter vegetables, try one of these recipes made with vegetable broth, instead of chicken broth.

Sweet Potato Bisque

4 cups cooked, skinned sweet potatoes (Can boil or roast.)
1 onion, minced
2 cups milk
2 cups broth
1 tablespoon rosemary
1 tablespoon butter or oil to sauté
1 / 4 cup orange juice (optional)
1 teaspoon orange zest (optional)

In large pot, saute minced onion. Add potatoes, milk, broth and rosemary. Bring to boil. Reduce heat and simmer 5 minutes. Stir or whisk to make smooth. (Mix in optional orange juice/zest.) (May instead use blender to smooth.)

If you like greater variety, try this Root Vegetable Soup from Better Homes and Gardens http://ww5.bhg.com/recipe/recipedetail.jhtml?recipeId=R016722
